This accessory is used exclusively in hot food areas such as Bain Maries found in takeaway shops, coffee lounges, lunch bars, etc. Typically, Bain Maries are "wet," and when the food pan is displaced, steam rises and fogs the glass front of the display. The construction of the Bain Marie clip is such that it fits snuggly onto a food pan and won't displace it or release steam. The clip, being made from stainless steel, is not susceptible to corrosion from moisture present in a bain-marie.

There is no need to purchase hinge blocks when using this accessory, as it accepts the bulb on the bottom of a standard food ticket, allowing the food ticket to be displayed on the tray (not in the food) as well. The clip gives a small amount of freedom to the ticket, so it can tilt back slightly to give a better viewing position.
